Triple Chocolate Keto Cookies



Triple Chocolate Keto Cookies


My son loves Chocolate!  He loved the Chocolate Chip Keto cookies so much that I decided to make this version just for him.  Cacao Powder has carbs and fiber in it but the antioxidants in it out weigh the little carbs in this cookie.  See net carbs in the nutritional information below.




Cookie Recipe:

1.5 Cups of Organic Almond Flour
1 Tsp of Aluminum Free Baking Powder
1/2 Tsp of Sea Salt (I use Murray River Gourmet Salt Flakes for a nice light taste) 
1/2 Tsp Organic Vanilla
1 Stick of Organic Grass fed Butter which is 1/2 cup
1 Organic Egg
4.5 oz Lily's Dark Chocolate Chips (You can add more if you like but will have to adjust carbs)

Frosting Recipe:

4 Tblsp Organic Heavy Cream
2 Tblsp Organic Terrasoul Cacao Powder
1/2 Cup Lakanto Powdered Monkfruit Sweetener


Directions:
Preheat oven to 325

1.  In a mixer cream together the softened butter and Lakanto Goldent Monkfruit Sweetener.  Once fully creamed together add in egg and vanilla.

2.  In a separate bowl have the Almond Flour, Coconut Flour, Baking Powder, and Sea Salt.  Stir the dry ingredients together.  (Do not add Chocolate chips yet.)

3.  Slowly add in the flour mixture into the mixer on a slow speed.  Once fully incorporated into a batter hand stir in the Lily's Chocolate Chips.

4.  Use a small cookie scoop or spoon to measure out around 30 cookies from mix.  Then flatten cookies  on a cookie sheet that has a silicone mat on it.  You can use parchment paper if you want but I found the silicone mat works much better and is more eco-friendly.  They will expand a tiny bit but not as much as traditional chocolate chip cookies so that is why I suggest flattening them a bit with either your hand or the bottom of a glass.

5. Bake 12 minutes.  The bottom will be browning at this point but you may think... these aren't done... well if you continue passed 12 minutes you could end up with hockey pucks rather than cookies and that is no good.   The cookies will be a little soft when you take them out.  Let them rest on the tray for 3 minutes before Pipping on the frosting.

6. Mix together the ingredients in the Frosting until smooth.

7.  Once cookies have rested outside of the oven for 3 minutes then add the Frosting to a pipping bag and pipe on to the cookies in a swirl.

8.  Let sit as long as your family can handle it (usually about 40 seconds for my son) and then gently take of tray.  I leave them on the tray up to half an hour.  I don’t stack the cookies for a few hours if possible.

Keto Glazed Chocolate Chip Cookies

Since my husband and son joined me on my Keto lifestyle they haven't complained at all because I am always trying to take my old recipes and adapt them to the Keto lifestyle!  My husband and son were craving some Chocolate Chip cookies... you know the soft yummy kind that melts in your mouth... well these certainly were a delight to their eyes and tummies!

For this recipe I took my favorite cookie base, and added a touch of Chocolate!  I hope you and your family will enjoy them!  Keto Micro information is below!

Cookie Recipe:

1.5 Cups of Organic Almond Flour
1 Tsp of Aluminum Free Baking Powder

Cardamom Glazed Keto Cookies!


Cardamom Glazed Keto Cookies with Cardamom Vitality Oil

These are by far my favorite Keto treats to date!  I love love love love the taste of these cookies!  They remind me of those pink colored cookies that are soft and yummy but in a super healthy way!  Packed with healthy fats and only about 1 net carb each!  Woohoo!

I have adapted this recipe into 3 other fun and tasty varieties that my husband and son have enjoyed.
One of their favorites was Chocolate Chip! I will be adding more of the other flavor varieties soon.

Cardamom Glazed Keto Cookie Recipe:

Keto Meltaway Peppermints

Holiday season is here and we all know what that means!  Holiday food and lots of it!  This year is the first year my whole family has been on a Keto friendly way of living.  Before we were mostly paleo but this year we switched it up a bit and added in a few organic milk products.  That has made it possible to add in some super fun things for the holidays like these amazing Keto Meltaways!  Yum! 

They are super simple to make! 

8oz Organic Cream Cheese
3/4 cup Lakanto Golden Monkfruit Sweetener (Powdered into about 1 and 3/4’s cups with a coffee grinder)
6 drops Young Living Peppermint Vitality Oil


First using a coffee grinder powder the golden monkfruit sweetener.  You can use another powdered sweetener instead but I like the taste and consistency that this provides.  Soften Cream cheese with a mixer and slowly add in the powdered monkfruit sweetener.  Once the monkfruit is all added then add in the 6 drops of peppermint vitality oil.  If you like really strong peppermint you can add a couple extra drops.  Also if desired you can add organic food coloring.  Roll into balls, place on a silicone mat, and use a fork to make ridges on the mints.  Put fork into some extra powdered sweetener to keep the mints from sticking to the fork.  Last put tray in freezer for 1/2 hour.  Then remove the mints from the tray and store in the freezer.  They last a long time unless your children find them, or husband.

This will make approximately 36 mints.  If you eat two per serving it is approximately 29 calories, 2.9 grams of fat, .4 carbohydrates, and .4 protein.  This was found through MyFitnessPal app.

Challenges and Choices Facing the truth forgiving myself

Over 2016 I had quite a few challenges, business wise, and emotional wise. It was not the best year for me but I woke when we went away for a vacation to Ocean Shores.

I love the ocean! It is my happy place. It is where I feel the most relaxed, most peaceful, and most connected to God. We took several weekend trips to the beach for 2015-2016.

It was a stormy weekend but during a break in the wind and the rain we headed out to the beach. It was beautiful. The waves were amazing and the sun shone bright in between the clouds. The first beach we went to was so nice that we decided to visit one that we knew had larger waves.

The second beach was windier and the waves were much larger. There was a beautiful fluff of sea foam along the beach closer to the water line that was blowing up the beach. It was so beautiful! The power of God in the crashing waves and the gently moving foam. So beautiful in fact that I really wanted to capture it in video.

As I was filming I had my husband and son move up the hill a little so that their sound wouldn't be in the video. Turns out that was the best thing I did that day. They were to the left and up from me on the beach. What I didn't know is a wave was heading towards them and that wave would soon circle around me. My husband was filming and running and I was standing still watching the waves right in front of me because we all know you shouldn't turn your back to the ocean.

Then my phone died because it had been in the ocean. For several days I was unplugged. During that time I got to a very low point. Unable to help others online, unable to take care of my business, thinking that my second electronic in 2 months was ruined and not having money to get a new one put me in a panic. What would happen to my business with no computer and no phone, what would happen to my ministry, what would happen to my friends that I could no longer encourage.

It put me at a place where I was feeling completely guilty which brought me back to the loss of my first son Nels. I was mad at myself, mad at my body for him being born with something that took his life, and mad that I wasn't able to do more. All of that emotion came crashing back in like the wave.

During those 4 days I began to heal from those things I kept inside but was still worried about not being able to continue in what I felt was where God had me placed for this time. My husband was praying with me encouraging me and yet I was not able to forgive myself yet. Plus I was super concerned about how I would be able to help with the bills with not being able to work my business. I felt guilty about that too. My Husband Chris reassured me that God would provide.

4 days later my phone began to work. It was a miracle and answer to prayer. What I found in the weeks after is that I needed a break... I need that time to spend one on one with God with nothing in the way.

For two weeks after I prayed, read the Bible, and I began to let it go. I let go of my guilt and anger at my body from losing Nels, I let go of my control of my business, and I gave it all over to God. Then I sought God's path for my life. I knew that it was time to get back to the ministry that God had given me before I lost my son. My Building a Healthy Living Temple ministry. Sure I have posted since I lost him. I tried to get back my healthy living temple.... but the guilt kept me locked up and unable to do as much as I wanted to do. That guilt equaled weight gain and sadness. No... I didn't go back to eating wheat and I did try my best to continue to eat healthy, I prayed, I read the word, I took vitamins, I tried healthy supplements but nothing was taking me back to what I was before I was pregnant with my son. I did find that I was having trouble with corn so taking that out helped a bit.

With new peace from forgiving myself and my body for the loss of our son I decided that bringing this blog back and sharing more about what I have learned about building a healthy living temple.

I am so thankful to the Lord that He has begun this transformation once again and I am feeling blessed and excited about 2017!

I am going to a be posting some great recipes, some fun stuff, and about essential oils and how they are helping me out with this journey. God is so good!

What's for Dinner? Turkey




Turkey is an amazing protein with tons of benefits! Low fat compared with some proteins! Eating lower fat has many known benefits!

Turkey contains a mineral called Selenium! Why is this good or important? Well there is some research out there that Selenium can help protect your body from free radicals and cancer!

Turkey also contains B vitamins that are vital for everything from metabolism to how you feel emotionally!

Then of course if you are having trouble sleeping you can always count on the Tryptophan in Turkey to help you out there! :)

Asher and I are cooking turkey today for when Chris gets home from work! I love helping Asher learn about healthy eating and cooking :)
